Meal Prep Review 5/01-5/07

Broccoli Cheddar Frittata

Dozen eggs, broccoli, cheddar, green onion, white onion, garlic, italian sausage. Combine and bake.

Thoughts: FUCKING 2pm. My body did Not want to take that at all at 3am. So I'd get to work super hungry from a few bites of frittata and come back to it that afternoon. A shame.

Cobb Salad

Lettuce, cubed turkey, cheddar, cranberries, sunflower seeds, cucumber, tomato, scallion, mustard, olive oil

Thoughts: Tasty! Good for meal prep in the empty feta container from last week. Not super filling but could certainly be worse.

Mushroom Rice

Rice, lb shiitakes, lb criminis, oz dried porcini, thyme, chicken bouillon. Flash cook the mushrooms and cook the rice in the water with the bouillon. Add the mushrooms back in, add thyme, and cook until done.

Thoughts: SOOOOO GOOOOOD. So good I even offered it to my friend.

Overall thoughts on meal prep this week:

Success overall but breakfast could use some improvements and lunch could be more substantial. $70
